1/2 lb. link sausage, sliced 1 1/2 lbs. ground beef 1 lg. onion, chopped 1 tbsp. chili powder (or more) 2 tsp. salt 1/4 tsp. pepper 1 (12 oz.) can whole kernel corn, drained 2 (8 oz.) cans tomato sauce 1 c. milk 1/2 c. corn meal 1 sm. can sliced olives, drained 1 c. grated cheddar cheese (1/4 lb.) Brown sausage slowly in large skillet. Pour off fat. Add beef and onion (I add garlic). Cook and stir until meat loses red color. Add seasonings, corn, tomato sauce, and milk. Simmer about 20 minutes. (Taste for seasonings.) Gradually add corn meal into meat mixture. Add olives. Pour into 3-quart casserole and top with cheese. Bake in moderate oven (325 degrees) about 40 minutes. Makes 6-8 servings. You can make it ahead, day before, double recipe. I made this a lot when my kids were all home and had their friends over. We all love it. |
