YAKIMA APPLE COFFEE CAKE | |
1/2 c. butter 1 c. sugar 1 egg 1/2 tsp. vanilla extract 1 tsp. grated lemon peel 2 c. all-purpose flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 c. sour cream 1 1/2 c. finely chopped Golden Delicious apples 1/2 c. chopped walnuts 1/2 c. dried currants TOPPING: Golden Delicious apple slices 2 tbsp. sugar 1/2 tsp. cinnamon Cream butter and sugar. Blend in egg, vanilla and grated lemon peel. Sift together flour, baking powder, soda and salt. Add to creamed mixture alternately with sour cream. Fold in chopped apples, walnuts and currants. Turn into greased and floured 10 inch tube pan. Arrange apple slices on top. Sprinkle with combined 2 tablespoons sugar and cinnamon. Bake at 350 degrees 1 hour or until cake tests done. Makes 12 servings. |
