ZUCCHINI CASSEROLE 
4 c. sliced zucchini
2 c. boiling water
1 c. mayonnaise
1 onion, chopped
1 c. grated Parmesan cheese
Salt and pepper to taste
2 tbsp. buttered bread crumbs

Cook zucchini in water until just tender, drain. In large bowl, beat eggs. Stir in mayonnaise, onion, cheese, salt, and pepper. Add zucchini. Turn into greased 1 1/2 quart casserole. Dot with butter and sprinkle with bread crumbs. Bake in 350 degree oven for 30 minutes.
