BELLE'S CHEESY MASHED POTATOES | |
8 medium sized potatoes 1/2 cup grated cheddar, Monterey Jack or Pepper Jack cheese 1/2 cup milk or half and half 3 tbsp. butter salt and pepper, to taste Wash potatoes and peel. Cover with water in a large saucepan and bring to a boil. Simmer until potatoes can be easily pierced by a fork (about 20 minutes). Drain potatoes and return to pan. Shake over heat until dry. Transfer potatoes to a bowl. In the same pan, heat milk and butter until steaming hot. Mash potatoes with cheese. Season to taste with salt and pepper. Serve. Makes 6 large servings.
