Break up one head of cauliflower and cook until tender in small amount of water (covered pan). In separate pan make a white sauce to which cheese (sharp cheddar) has been added. Drain cauliflower, place in casserole dish. Pour cheese sauce over. Cover and keep in warm oven until ready to serve.
