DELICIOUS APPLE SNACK CAKE | |
3/4 c. vegetable oil 2 eggs 2 c. sugar 2 1/2 c. unsifted all purpose flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. ground cinnamon 3 c. peeled, chopped apple 1 c. chopped pecans 1 (6 oz.) pkg. butterscotch morsels 1 tsp. salt Combine oil, eggs and sugar in large mixing bowl. Beat at medium speed until well mixed. Combine flour, soda, baking powder, salt and cinnamon. Stir in pecans, half of butterscotch morsels and apples. Spread batter in a greased 13"x9"x2" pan or Pyrex dish. Sprinkle remaining butterscotch morsels on top. Bake at 350 degrees for 55 to 60 minutes or until done. |

I halved ingredients and baked in an 8x8 inch pyrex dish. I was a little worried at how thick the batter was -- seemed more like cookie dough than cake batter, so it was difficult to mix in the chopped apple (I had made rather a large dice). But once in the oven, magic occurred, and it turned into a delicious snack cake!
