GOLDEN DELICIOUS APPLE CAKE 
3 c. flour
1 1/2 c. shortening (butter or substitute)
4 tbsp. sugar
4 eggs
Rind & juice of 1 lemon
1/4 tsp. baking powder
1/8 tsp. salt
6-8 not too ripe Golden Delicious apples
Cinnamon

Mix baking powder with flour. Add the flour, shortening and sugar as you would for a pie crust. Then add the 4 eggs (slightly beaten). You will have reserved the white of only 1 egg to be used later.

Roll half the dough on a floured board, then transfer to the baking pan. (We use a pan that is 1 1/2 inches high.) It is easier to roll the dough over the rolling pin and then transfer to pan. Sprinkle dough with a little sugar, and add the apples. We use plenty of apples, until they are about 3/4 inches high. Add plenty of sugar and cinnamon and then place remaining dough on top. The dough should be rolled out - pinch around the sides and then spread the white of the egg over the top of the dough. (The egg should not have been beaten.) Sprinkle with granulated sugar and if you like, add chopped nuts. Bake 3/4 hour in an oven 350 degrees.
