GOLDEN DELICIOUS APPLE CAKE | |
3 c. all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/4 to 1/2 tsp. nutmeg 1 c. vegetable oil 2 eggs 1 tbsp. vanilla extract 2 c. sugar 3 c. peeled diced golden delicious apples 1 to 2 c. chopped pecans 1/2 c. white raisins (scalded, drained and cooled) Combine first 5 ingredients, sift three times, set aside. Mix oil, eggs and vanilla in small bowl and beat until creamy. Pour over sugar in large bowl and mix well. Add flour mixture. Stir in chopped apples, pecans and raisins. Batter will be very stiff. Spoon batter into a greased and floured 10-inch Bundt pan. Bake at 325°F for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool cake in pan for 10 minutes and then remove. Store in airtight container. For a light glaze, take a few spoonfuls of powdered sugar and add fresh orange juice to make a thin syrup and pour over your cake while still hot. |
