HEALTH MUFFINS 
2 c. flour
1 1/4 c. white sugar
2 tsp. cinnamon
1 c. coconut
2 eggs
1/2 c. molasses
2 tsp. vanilla
2 tsp. baking soda
1/2 tsp. salt
2 c. grated carrots
1 apple peeled grated
1 c. salad oil
1 c. Bran flakes

In a large bowl, combine dry ingredients. Stir in carrots and rest of stuff. Beat eggs and fold into batter until all is just mixed. Spoon into well greased muffin cups, filling to the top. Bake at 350 degrees for 20 to 25 minutes. Makes 18.
