HEALTH - FULL BRAN MUFFINS 
1 1/4 c. wheat bran
1/2 c. raisins
1/4 c. boiling water
1 c. whole wheat flour
2 tbsp. wheat germ
2 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
1/4 to 1/2 c. molasses or honey
1/4 c. vegetable oil
1 c. milk
2 tbsp. plain yogurt

Mix 1/4 cup bran, raisins, and boiling water. Set aside. Mix dry ingredients including 1 cup bran left. Mix liquid ingredients. Fold liquid and bran/raisins into dry ingredients. Do not overmix. Bake 15 to 18 minutes at 400 degrees. These muffins freeze well. Microwave makes them like fresh baked! Makes 12 muffins.

Since microwave ovens vary in power, you may need to adjust your cooking time.
