HEALTH - FULL BRAN MUFFINS | |
1 1/4 c. wheat bran 1/2 c. raisins 1/4 c. boiling water 1 c. whole wheat flour 2 tbsp. wheat germ 2 tsp. baking powder 1/2 tsp. salt 1 egg, beaten 1/4 to 1/2 c. molasses or honey 1/4 c. vegetable oil 1 c. milk 2 tbsp. plain yogurt Mix 1/4 cup bran, raisins, and boiling water. Set aside. Mix dry ingredients including 1 cup bran left. Mix liquid ingredients. Fold liquid and bran/raisins into dry ingredients. Do not overmix. Bake 15 to 18 minutes at 400 degrees. These muffins freeze well. Microwave makes them like fresh baked! Makes 12 muffins. |
