ZUCCHINI CASSEROLE 
3 c. sliced zucchini
2 carrots, shredded
1 sm. onion, grated
1 sm. jar pimentos
1 can cream of chicken soup, undiluted
1/2 pkg. Pepperidge Farm stuffing
1/3 c. melted butter
1/2 c. sour cream

Mix all ingredients with 1/2 stuffing. Put in casserole and add remaining stuffing. Bake 350 for 30 minutes.
