2 lb. zucchini
1/2 pkg. Pepperidge Farm stuffing
2 eggs, beaten
Salt & pepper to taste
1/2 c. grated Cheddar cheese

Mix ingredients except cheese and place in a greased casserole. Bake at 350 degrees for about 30 minutes. Sprinkle grated cheese on top and return to oven for a few minutes until cheese melts. Serves 4.
