CHEESE ZUCCHINI CASSEROLE 
6 c. chunked zucchini
1/2 onion, chopped
1 sm. container of sour cream
1 can cheddar cheese soup
1 stick butter
1 (8 oz.) pkg. Pepperidge Farm stuffing mix cubes

Boil zucchini and onion in water until translucent. Combine sour cream and cheese soup. Melt butter and add stuffing mix. Drain zucchini and fold into cheese mixture.

In 9 x 13 pan place layer of stuffing, then zucchini. Put remaining stuffing on top. Bake at 350 degrees for 45-60 minutes.
