ZUCCHINI & CHEESE CASSEROLE 
2 lbs. zucchini
2 eggs
1 1/2 c. shredded cheese, e.g. cheddar
1 can dry onion rings

In a covered 1 1/2 quart casserole, cook sliced zucchini 10 minutes on HIGH in microwave. Add slightly beaten eggs, cheese and mix well. Cover with onion rings. Cook uncovered 7 to 8 minutes on HIGH. Add salt and pepper to taste.

Since microwave ovens vary in power, you may need to adjust your cooking time.
