ZUCCHINI CHEESE CASSEROLE 
3 med. zucchini, sliced
1/2 c. chopped onion
2 tsp. oil
1 lb. cottage cheese
1 tsp. basil
1/2 tsp. oregano
2 tomatoes, sliced
1/3 c. Parmesan cheese

Preheat oven to 350 degrees. Heat oil in skillet and saute zucchini and onion. Whip cottage cheese with basil and oregano in blender. Place alternating layers of zucchini, cottage cheese and tomato in a 1 1/2 quart casserole dish. Top with Parmesan. Bake uncovered for 25 to 30 minutes.
