ZUCCHINI CASSEROLE 
3 c. zucchini, cut in bite size pieces
2 c. grated carrots
1 sm. onion, diced
1 sm. jar pimento or 1 pepper, diced
1 can cream of chicken soup
1/2 c. sour cream or Miracle Whip
1/3 c. melted butter
1/2 pkg. Pepperidge Farm dressing

Mix dressing with butter. Mix all other ingredients with half the dressing mixture. Put in casserole dish and top with remaining dressing. Bake at 350 degrees for 45 minutes.
