ZUCCHINI CASSEROLE 
3 lg. zucchini, cut in cukes, unpeeled
1 carrot, grated
1 onion, cut fine
1 can cream of chicken soup
8 oz. sour cream
2 c. (16 oz.) Pepperidge Farm stuffing
1 stick butter, melted

Mix stuffing with melted butter. Add 1/2 to first 5 ingredients, sprinkle 1/2 on top of casserole. Bake at 350 degrees for 25 to 30 minutes.
