APPLE MAPLE MARINATED PORK
TENDERLOIN
 
1 pork tenderloin
dash of heavy cream (for sauce)

MARINADE:

3/4 cup maple syrup
1/2 cup apple juice
1 tsp. cinnamon
1 tsp. nutmeg

In mixing bowl whisk together maple syrup, apple juice, cinnamon and nutmeg. Place pork in large freezer bag and pour in mixture. Marinade in refrigerator for 12 to 24 hours.

In a medium depth roasting pan place pork directly on pan. add about 1/4 of the remaining marinade into the pan (save the rest) and a little more apple juice just to cover the bottom of pan. Cover and roast in oven at 350°F until done (160°F internal temperature using meat thermometer).

Remove from oven and take out pork, leave on counter covered in foil to rest. While pork is resting de-glaze pan on the stovetop adding the remaining marinade and a little more apple juice and syrup if needed. Reduce by about half. Add a dash of cream to make a great sauce. Slice pork and serve.
