CHEESY ZUCCHINI 
2-3 med. zucchini squash, green or yellow, sliced thin
2-3 med. tomatoes, diced
1 med. onion, diced
2 c. sliced mushrooms (or 1 sm. can)
1 tsp. dill weed
4 oz. grated cheddar or Mozzarella cheese
2 tbsp. oil

Spray large frying pan with cooking oil (like Pam) spray. Saute onions and mushrooms in oil 5 minutes. Add and mix zucchini and dill. Cook over medium-high heat while stirring for 10 minutes. Add tomatoes, continue cooking for 5-10 minutes.

Turn off heat and sprinkle cheese over mixture. Cover with lid while cheese melts, 2-3 minutes. Serves 4.
