CRUSTLESS POTATO QUICHE 
5 eggs, beaten
1 (12 oz.) pkg. frozen hash browns, thawed
1 c. (4 oz.) shredded Swiss or Monterey Jack cheese
1 lg. green onion, chopped
1/2 c. cream-style cottage cheese
1/4 tsp. salt
1/8 tsp. pepper
Dash of hot sauce
Paprika
6 slices bacon, cooked & crumbled

Combine first 8 ingredients; stir well. Pour mixture into a lightly greased 9 inch pie plate; sprinkle with paprika. Bake at 350 degrees for 25 minutes or until set. Sprinkle bacon evenly on top; bake an additional 5 minutes. Let stand 5 minutes before serving. Yield: one 9 inch quiche.
