ZUCCHINI-SAUSAGE CASSEROLE 
4 c. sliced zucchini (no seeds)
1/2 lb. pork sausage
1/2 c. onion, chopped
1/2 c. cheese, cubed
1/2 c. crackers, crumbled
2 eggs, beaten
1/2 tsp. thyme

Brown sausage and drain. Cook zucchini, drain and chop. Combine all ingredients except save half of cheese to cover on top. Bake, covered for 45 minutes in 350 degree oven. Remove cover and brown.
