A GARDEN SPECIAL 
2 zucchini
2 baking potatoes
10 leaves fresh basil
2 tomatoes
1/3 c. olive oil
salt and pepper to taste

Preheat oven to 400 degrees. Thinly slice zucchini, tomatoes and potatoes. Arrange the vegetables in a lightly oiled shallow casserole dish, alternating the slices of vegetables. Coat with olive oil and bake 30 to 40 minutes until potatoes are tender. Sprinkle basil, salt and pepper over vegetables. Serve hot.
