GARDEN PASTA SAUCE 
1 c. chopped onions
2 cloves minced garlic
1 tbsp. olive oil
1 (28 oz.) can whole tomatoes, undrained & crushed
1 (20 oz.) can crushed tomatoes
1 c. each steamed broccoli, cauliflower
1 med. zucchini, sliced
1 c. sliced fresh mushrooms
Few sprigs fresh sweet basil & parsley
2 chicken breasts, boneless, skinned, sliced in shreds
1 tbsp. olive oil

Saute onions and garlic in 1 tablespoon olive oil. Add both cans of tomatoes, the basil and parsley, salt and pepper to taste. Simmer for 2-3 hours (I use a crock pot). Stir fry chicken in 1 tablespoon olive oil. Add zucchini and mushrooms, for 4-5 minutes or until crisp tender. Add steamed vegetables.

Season to taste with garlic powder, salt and pepper. Serve over freshly cooked angel hair pasta or ziti. Top vegetables with tomato sauce.
