BRIGHT MINTY DRESSING 
1/2 c. yogurt
2 tbsp. oil
1 tbsp. lemon juice
1/8 tsp. salt
Black pepper
1/2 c. cucumber, sliced
2 tbsp. fresh mint leaves
1 sliced scallion

Place ingredients in a blender; blend until smooth. This is good contrast to spicy meals. I like it on Wheatena cereal. Makes 3/4 cup.
