KENTUCKY CREAM CANDY 
The outside temperature should be well below freezing when this candy is made, and the humidity low, for best results.

1 c. water
3/4 stick butter
2 c. granulated sugar
Flavoring and food coloring

Combine butter and water in small saucepan; heat to dissolve butter. Place the sugar in a larger saucepan; pour water-butter mixture over it. Place lid on pan and heat until steam is visible. Remove lid and cook to 265 degrees on candy thermometer.

Pour mixture onto buttered marble slab which has been chilled out-of-doors at least 24 hours. Flavoring and coloring may be added to buttered slab. (The candy may be poured outdoors and its consistency is improved by pulling it out doors.) Pull candy until stiff and creamy; cut with scissors.

Being from Kentucky and holding with old traditions, I see a lot of MYTHS on these cream candy recipes. The only true ingredients are CREAM, WATER, SUGAR, AND SALT. It is mixed in the pan and never touched until it is poured out on a buttered, cool marble slab. The whole process when done correctly, is approximately 45-60 minutes. The slab does not have to be outdoors, and you do not have to pull it outdoors, and there is no food coloring, no butter, and it does not have to be below freezing. I make mine in the dining room. The Ruth Hunt candy factory is only 5 miles from my home and I certainly could give them a run for their money if I so desired. Mine is always chosen over theirs.

I was so happy to see someone who really knew how to make cream candy. My Mom made it at Christmas all of my childhood. she did not use coloring or butter. except butter on the marble slab. she would pull it on our backporch but we lived in Fla. She was from Covington, Ky. sure would love to buy this from you if you have any.
