ORIENTAL PORK CHOPS 
Oil
4 pork chops, 3/4" thick
1/2 c. water
1/4 c. soy sauce
1/4 c. ketchup
1 tbsp. brown sugar
1/4 c. sherry
1 tbsp. cornstarch
2 tbsp. lemon juice

Pour enough oil in skillet to cover bottom. Add pork chops over medium heat and brown well on both sides. Combine water, soy sauce, ketchup and brown sugar in a bowl. Pour mixture over chops and heat until bubbly. Reduce to simmer. Add sherry, cover and cook 45 minutes. Turn chops every 15 minutes. Transfer chops to serving platter. Dissolve cornstarch in lemon juice and stir mixture in pan juices in skillet. Cook on high until thickens and boils. Pour over chops.
