CAULIFLOWER - BACON SALAD 
1 head lettuce, torn
1 Bermuda onion, thinly sliced
1 lb. bacon, fried crisp
1 head cauliflower, broken
1/4 c. sugar
1/3 c. grated Parmesan cheese
Salt & pepper
2 c. mayonnaise

Arrange ingredients in layers in large salad bowl: Torn lettuce, sliced onion, crisp bacon pieces and broken cauliflower. Sprinkle with sugar and Parmesan cheese. Season with salt and pepper. Top with spoonfuls of mayonnaise. Cover bowl with plastic wrap and refrigerate. Toss before serving. Serves 10-12. Keep salad cold on buffet table by placing salad bowl inside a large bowl filled with ice.
