PRAWNS A LA SZECHWAN 
1/2 lb. prawns (shrimp)
1/2 tsp. garlic, minced
1/2 ginger root, grated
1 tsp. dried red chili peppers, chopped very fine
3 scallions, chopped
2 tbsp. vegetable oil
2 tbsp. sherry
4 tbsp. catsup
Pinch of sugar
1 tsp. cornstarch mixed with 2 tbsp. water

In wok, skillet or chafing dish, heat oil until hot. Saute shrimp, garlic, ginger root, scallions and chile peppers. Cook a few minutes. Add sherry, catsup, sugar and cornstarch mixture and continue to cook, stirring constantly, until shrimp are done. Serve immediately.
