MARINATED VEGETABLES 
1/2 cauliflower, broken into bite sized bits
4 carrots
2 stalks celery
1 green pepper
1/2 lb. medium mushrooms
1 can pitted black olives, drained
1 c. cherry tomatoes
1 (3 oz.) jar pimento-filled green olives, drained

Dressing:

1/4 c. water
2 tbsp. sugar
1 tsp. salt
1/2 tsp. dried white oregano

Cut carrots, celery and green pepper into bite sized pieces. Put vegetables into a Ziploc plastic bag (large).

Combine dressing ingredients to a boil, stirring on occasion. Pour hot liquid over vegetables. Seal bag. Chill at least 8 hours. Drain vegetables and serve. Delicious and healthy.
