BROCCOLI WITH CHEESE PIE 
1 (1 lb.) bunch broccoli
1/2 c. chopped onion
1/4 c. water
4 eggs, slightly beaten
1 1/4 c. milk
4-6 drops hot sauce
1/2 tsp. salt
1/8 tsp. freshly ground pepper
1/8 tsp. ground nutmeg
1 tbsp. minced fresh parsley
2/3 c. fresh shredded Swiss cheese
1/3 c. grated Parmesan cheese

Remove tough ends of lower stalks and wash broccoli thoroughly; cut flowerettes and stems into thin slices.

Combine broccoli, onion and water in a saucepan; cover and cook over medium heat 6 to 8 minutes. Drain thoroughly to remove excess moisture.

Combine next 8 ingredients. Stir in vegetables, and pour mixture into a greased 10" pie plate. Sprinkle with Parmesan cheese; bake at 350 degrees for about 30 minutes or until set. Let stand 10 minutes.
