CHEESE ONION PIE 
1 qt. milk
6 eggs, separated
1 1/4 c. Parmesan cheese
3/4 c. chopped onion or chives
1 1/2 tsp. salt
Dash of cayenne pepper
1 lb. bacon, sliced

Set oven at 375 degrees. Prepare pastry-lined pie pans (four 9-inch pans) with fluted edges. Add slightly beaten eggs to milk. Add cheese and salt and pepper. Cook sliced bacon until crisp. Break into pieces and sprinkle over bacon.

Pour cheese custard over mixture. Sprinkle with paprika and bake. Serve hot, topped with French fried onion rings.

Other dishes may be made from this recipe. Omit bacon, use smaller portions and serve with sliced beef and gravy. Small portions of this pie may be served as appetizers.
