BROCCOLI & CHEESE BAKE 
1 c. macaroni
1 1/2 lbs. broccoli
2 eggs
1 c. cottage cheese
1/4 c. milk
2 tbsp. grated Parmesan cheese
1 tbsp. flour
Dash of nutmeg
Dash of cayenne pepper

Bring a 3 quart pot of water to a boil. Cook macaroni. Rinse and cool. Cut the broccoli into stalks and remove tough outer layer from the stems. Steam the broccoli until it just begins to get tender, 10 minutes. The broccoli should be bright green and firm. Rinse and set aside.

Place eggs, cottage cheese, milk, Parmesan, flour, nutmeg and cayenne pepper in a blender. Process on low speed until smooth. Place macaroni in bottom of 9 to 10 inch pie plate. Arrange broccoli stalks in a circle around the outside edge of the pie plate so top of each stalk covers stem of stalk in front of it. Save a couple of florets to decorate. Spoon the cheese mixture over macaroni but not over broccoli. Cover loosely with foil and bake at 350 degrees for 40 minutes. 4 servings.
