SWEET AND SOUR PORK CHOPS 
1 tsp. ginger
1 tsp. paprika
1 tsp. salt
1/4 c. flour
1/2 tsp. pepper
6 pork chops
1 tbsp. shortening
1 c. apple juice
2 tbsp. vinegar
3 tbsp. brown sugar
2 med. tomatoes (optional)

Mix first five ingredients. Coat both sides of pork chops in flour mixture. Brown chops in well melted shortening. Pour in apple juice and vinegar. Sprinkle with brown sugar. Cook over low heat for at least 40 minutes or until sauce has thickened to a glaze-like consistency. Serve with sliced tomatoes on top if desired. Good over rice. Serves 6.
