DOWN SOUTH BARBECUE 
2 onions, sliced
4 - 5 lb. pork roast
5 - 6 cloves
2 c. water
16 oz. bottle of barbecue sauce
1 lg. onion, chopped

Put half of the sliced onions in bottom of crock pot. Add meat and other ingredients with remaining onion on top. Cover and cook overnight 8 to 12 hours on low. Remove bone and fat from meat. Put meat back in crock pot. Add chopped onions and sauce. Cover and cook additional 3 to 5 hours on high or 8 to 12 hours on low. Stirring 2 or 3 times.
