HAM LOAF 
1 lb. ground smoked ham
1 lb. ground shoulder pork
1 c. bread crumbs
1 egg
1 c. milk
1 tbsp. brown sugar
1/3 tsp. dry mustard

Mix well all ingredients. Place in pan and cover with 2 tablespoons brown sugar and 1/3 tablespoons dry mustard.

Bake in 350 degree oven for 1 hour. Increase to 400 degrees and continue for 10-15 minutes to brown. Garnish with chilled pineapple or glazed pineapple if desired. Serve with hot mustard sauce.

HOT MUSTARD SAUCE:

1 c. evaporated milk
2 tbsp. dry mustard
1/2 tbsp. flour
1/4 tsp. salt
1/2 c. sugar
1 egg yolk, beaten
1/3 c. vinegar, warmed

Put evaporated milk in double boiler. When warm add sugar. Dissolve mustard and flour in a little of the warm milk. Add to rest of warm milk. Pour this over egg yolk slowly. Return to double boiler. Add warmed vinegar very slowly and beat with egg beater until consistency of soft custard. Serve with ham loaf.

HAM OR HAM LOAF SAUCE:

6 tbsp. currant jelly
6 tbsp. ketchup
3 tbsp. butter
2 tbsp. vinegar
Pinch of salt

Beat together over heat with egg beater. Serve hot with ham or ham loaf.
