ZUCCHINI CASSEROLE 
4 c. cut up (chunks) zucchini
2 eggs, beaten
1 c. mayonnaise
1 c. grated Parmesan or Cheddar cheese
1 cut up onion
1/2 c. green pepper, chopped
Salt, pepper to taste
Bread crumbs

Cut up zucchini and boil just until tender. Drain.

Beat eggs, add mayonnaise, continue to beat. Then fold in onion, green pepper, cheese, salt and pepper. Toss zucchini until well coated (in egg mixture).

Pour into 1 1/2 quart casserole. Dot with butter. Cover top with bread crumbs. Bake at 350 degrees for 30 minutes (uncovered). Serves 4.
