ITALIAN BEEF 
3 1/2-4 lb. boneless chuck roast

Remove most of the fat and cut in large chunks.

1/2 sm. jar pepper rings (juice included)
1 pkg. Good Seasons Italian Salad Dressing Mix
1 pkg. Au Jus Gravy Mix

Place all ingredients in crockpot (pepper and juice to taste.) Add about 1 1/2 cups of water. Cook on medium setting for about 8 hours. Serve on hoagie buns with peppers, if desired.
