SMOTHERED PORK CHOPS 
6 center cut pork chops, 1" thick
2 tsp. salt
1/2 tsp. white pepper
1/4 c. pancake mix
2 tbsp. vegetable shortening
3 med. onions, peeled & sliced
1 tbsp. sugar
1/4 c. flour
2 c. boiling water

Wipe pork chops; sprinkle with 1 teaspoon salt and 1/4 teaspoon white pepper, coat with pancake mix. Heat shortening in a large skillet; brown chops well on both sides, remove from skillet to shallow roasting pan.

Saute onions with 1 teaspoon salt and 1/4 teaspoon white pepper and 1 tablespoon sugar in a small skillet until lightly browned. Stir in 1/4 cup flour, cook until well blended. Gradually add 2 cup boiling water. Cook over medium heat, stirring constantly until sauce thickens and boils. Pour over chops. Cover pan tightly with aluminum foil and bake at 350 degrees until heated and chops are done. Serves 6.

I had my doubts at first. This is a great recipe!!! I did change a couple of things: I didn't use the white pepper or the sugar. The onions make up for the sugar. I used a cup of flour and two cups of water. Ummm Ummm good! !
