SKILLET SUMMER SQUASH | |
1/4 c. butter 4 c. thinly sliced summer yellow squash 1 onion, sliced 1 tsp. salt Dash of pepper 1/4 c. water 1 1/2 c. broccoli pieces or snow peas 1 c. grated cheese - cheddar or sharp Melt butter in skillet; add squash, onions, broccoli, peas, salt, pepper, and water. Cook covered 10-15 minutes or until squash is tender. Turn heat off and uncover. sprinkle cheese over squash and recover until cheese melts, about 2 minutes. Gives 4 generous servings. |
