YELLOW SQUASH SKILLET DISH 
3 yellow squash
2 ripe tomatoes
Butter
1 lg. onion
1 can green chilies, diced
1 c. Cheddar cheese, grated

Slice squash, tomatoes, onion. Melt butter in skillet and add squash and onion. Cover and cook, stirring occasionally. When vegetables are almost done, add tomatoes and green chilies. Continue to cook approximately 5 minutes more covered. Add cheese and cook until melted. Serve immediately.
