HAM JACKS 
12 English muffins, split
1/2 lb. ham, chopped or diced
1/2 c. mayonnaise
1/2 tsp. salt
1 lb. cheese (cheddar or Monterey Jack or combination)
1/2 c. or less minced onion
Dash of Tabasco

Make filling by combining all ingredients except the English muffins. Refrigerate overnight. When ready to serve, put filling on muffins; cook under broiler until bubbly and light brown. It's a great breakfast food - or good anytime!
