APPLE WALNUT SUPREME CAKE 
4 c. chopped apples
1 3/4 c. white sugar
2 eggs
1/2 c. oil
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 c. chopped walnuts

LEMON GLAZE:

1 c. confectioners' sugar
1 1/2 tbsp. lemon juice
1/2 tsp. vanilla
1 tbsp. corn syrup

Combine apples and sugar; set aside. In a large bowl, mix eggs, oil, and vanilla; beat 1 minute at medium speed. Add combined dry ingredients alternately with apple mixture. Stir in walnuts. Bake in a greased and floured 9 x 13 inch pan at 350 degrees for 45 to 50 minutes. Spread lemon glaze on cooled cake.
