APPLE WALNUT CAKE 
4 c. apples, coarsely chopped
2 c. sugar
2 eggs
2 tsp. vanilla
2 c. all-purpose flour
1/2 c. vegetable oil
2 tsp. baking soda
1 1/2-2 tsp. cinnamon
1 tsp. salt
1 c. chopped walnuts

Combine apples and sugar; let stand. Beat eggs and add oil and vanilla. Mix and sift flour and baking powder, cinnamon and salt. Stir in alternately with apple sugar mixture. Add walnuts.

Pour into greased and floured 13 x 9 x 2 inch pan. Bake at 350 degrees for 45 minutes to 1 hour or until cake is done. Let stand in pan to cool. Ice with lemon butter icing or whipped cream.

ICING:

1 stick butter, melted
1 c. brown sugar, packed
1 tsp. vanilla or lemon extract
1/2 c. evaporated milk or whole milk

Combine all. Bring to rolling boil and pour over cooled cake.
