FRESH APPLE CAKE 
1 c. salad oil
2 c. sugar
3 eggs, beaten
3 c. chopped, peeled apples
1 c. chopped pecans
3 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. vanilla

Combine salad oil, sugar and eggs in large bowl. Add apples and pecans. Mix together flour, salt and soda and add to other ingredients. Add vanilla and stir well. Pour into greased and floured 9"x13" pan and place in cold oven. Bake at 325 degrees for 45 minutes.

BROWN SUGAR GLAZE:

1/2 c. butter
1 c. light brown sugar
1/4 c. evaporated milk
1 tsp. vanilla

Heat butter and light brown sugar over low flame until melted. Add evaporated milk. Let mixture come to a full boil and remove from heat. Add vanilla. Cool. Pour over cooled cake. The cake serves 12.
