ALMA'S FRESH APPLE CAKE 
1 1/2 c. cooking oil
2 c. sugar
3 eggs
3 c. flour
1 tsp.s salt
1 tsp. baking soda
2 tsp. vanilla
3 c. diced, unpeeled apples
1 c. chopped pecans

Combine oil, sugar and eggs and beat for 3 minutes at medium speed. Add flour, salt, soda and vanilla. Fold in apples and pecans. Pour into greased and floured tube pan. Bake 1 hour 20 minutes at 300 degrees. Cool slightly and turn out; then glaze.

GLAZE:

1 stick butter
1/2 c. packed light brown sugar
2 tbsp. cream

Bring to a boil and cook for about 15 minutes. Pour on cake while hot.
