APPLE CAKE | |
1/2 c. oil 1 c. buttermilk 2 c. sugar 3 eggs, beaten 3 c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1 tsp. vanilla extract 1 tsp. lemon extract 3 c. pared, sliced apples 1 c. walnuts, chopped Preheat oven to 300 degrees. Combine oil and sugar. Blend in beaten eggs. In a separate bowl, combine flour, baking soda, salt and cinnamon. Gradually add to oil and sugar mixture. Add buttermilk and continue beating with electric mixer. Add vanilla and lemon extracts. Stir in apples and nuts. Place in a greased and floured 9x13 inch cake pan. Bake for 1 hour and 20 minutes at 300 degrees or until cake tests done with a toothpick. While cake is still warm, cover surface with glaze. GLAZE: Juice of 2 fresh lemons, squeezed 1 c. confectioners' sugar Mix with spoon until all lumps are dissolved. Spread on top of cake while cake is still warm. |
