FRESH APPLE SPICE CAKE 
1 c. vegetable oil (Crisco)
1 tsp. baking soda
1 tsp. vanilla
3 c. peeled, finely chopped apples
3 c. all-purpose flour
1 tsp. nutmeg
3 eggs
1 tsp. ground cinnamon
2 c. sugar
1/2 tsp. salt
1 c. chopped pecans

Combine oil and sugar. Beat well. Add eggs, one at a time, beating well after each. Combine flour, soda, salt, cinnamon and nutmeg; stir. Add dry ingredients to sugar mixture, beating well. Add vanilla, mix well. Stir in pecans and apples. Pour batter into a greased and floured 10 inch tube pan. Bake at 350 degrees for 1 hour and 15 minutes or until cake tests done.

Using a toothpick, punch holes in cake while hot. Spoon glaze over cake.

GLAZE;
1/2 c. sugar
1/4 tsp. baking soda
1 1/2 tsp. vanilla
1/4 c. buttermilk
2 tbsp. butter
