FRESH APPLE CAKE 
Grease and cut waxed paper to fit tube pan.

Prepare:

3 c. diced fresh apples
1 c. crushed pecans

Beat: 1 1/2 c. Wesson oil 3 eggs

Sift together: 1 tsp. salt 1 tsp. baking soda 2 tsp. baking powder

Add to sugar mixture. Beat, add 1 teaspoon vanilla, nuts and apples.

Bake at 350 degrees for 1 hour.

Apricot Glaze
1 c. apricot preserves
1 tbsp. lemon juice

Heat preserves and lemon juice in pan until bubbly. Strain in a fine sieve, then brush on cake. Makes cake shiny and also holds in moisture of the cake. Since apricots are so mild in flavor, it does not affect the flavor of the cake.
