FRESH APPLE CAKE 
CAKE:

2 c. sugar
3 c. all purpose flour
1 1/2 c. Wesson oil
1 1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla
1 tsp. cinnamon
2 eggs, beaten
4 c. chopped apples
1 c. chopped pecans

GLAZE:

1 c. brown sugar
1 stick butter
1 tsp. vanilla
1/4 c. milk

Cake: Cream sugar and eggs, add oil, then sift in all dry ingredients, add vanilla. Add apples and pecans by hand. Preheat oven to 325 degrees. Bake in tube pan for 1 1/2 hours.

Glaze: In a medium size sauce pan, combine all ingredients and bring to boil for 2 minutes. Pour over cake when cake comes from oven, still in pan. Remove from pan after cake has completely cooled.
