PUMPKIN CAKE | |
3 eggs 1 (16 oz.) can pumpkin 3/4 c. oil 3/4 c. water 2 1/2 c. flour 1 1/2 tsp. baking soda 3/4 tsp. cinnamon 1 c. raisins 2 1/4 c. sugar 1 tsp. salt 3/4 tsp. nutmeg 1/2 c. nuts Bake at 350 degrees for 1 hour. Cool and frost with Cream Cheese Frosting. CREAM CHEESE FROSTING: 4 oz. cream cheese 3 tbsp. butter 1 tsp. vanilla or lemon juice 1/2 c. 10X sugar Mix all ingredients together and spread over cooled cake. (Allentown-Trinity) |
